Healthy Holiday Series – Baked Apple Cups

It’s time for an easy dessert time this week on the Healthy Holidays Series! Confession – I am not a huge fan of dessert/sweets, but I know the majority of people are. I wanted to find a recipe that incorporated a fall fruit without being overly sweet, plus like always – needed to be an easy recipe! These baked apple cups were so simple and as a bonus, made my apartment smell amazing while they were baking. These are perfect if you are having a smaller group for your holiday dinner and don’t want to make a whole apple pie or for people (like me) who just want a small bite of dessert at the end of dinner. These can also be baked a couple days early and stored in an airtight container until you are ready to serve them – extra bonus!

BAKED APPLE CUPS

Ingredients

  • 1 sheet of puff pastry, defrosted
  • 1 Tbsp melted butter
  • 1 tsp sugar
  • 3 apples, cored and thinly sliced
  • 2 tbsp + 1 tsp Brown Sugar
  • 1/2 tsp Cinnamon
  • 1/8 tsp Nutmeg
  • 2 tsp Lemon Juice
  • 1 tsp zested Lemon Rind

First I sliced up all the apples! I ended up cutting the apples in quarters to make it easy to take the core out and then slicing each quarter into thin slices.

Once I mixed in the brown sugar, cinnamon, nutmeg, lemon juice and lemon zest –

I prepared my puff pastry! I brushed it with the melted butter and sprinkled the teaspoon of sugar on top, then cut it into 9 pieces.

Once I had both pieces ready, I assembled my apple cups! I put one piece of puff pastry in each muffin cup and then tried to lay the apple slices as neatly as possible… but got tired and sort of ended up shoving them the best way they would fit. This is also when I learned that cutting them very thin is key!! The apples bend into a round shape a lot easier when they are thinner.

I baked the apple cups for about 25 minutes, until the puff pastry corners were golden brown and the apples were bubbly.

They turned out better than I thought and even I would enjoy eating this after dinner! I would recommend eating them warm, so if you bake the apple cups ahead of time, stick them back in the oven for a few minutes to get bubbly again.
