Easy Green Beans

I know some people operate on the belief that green food doesn’t belong anywhere on a holiday table but I believe that more vegetables is never a bad thing! I love having a green side with dinner and eating my vegetables first – it fills me up and then I can enjoy my mashed potatoes with the knowledge that I’ve already gotten my serving of vegetables! This green bean recipe is super easy, only uses one pan and you could easily use whatever green vegetable you want if green beans aren’t your jam. Broccoli, brussels sprouts, kale, asparagus – whatever your favorite is, cook it up for your holiday and you are more likely to eat it!

Ingredients

  • 8oz Green Beans
  • 1 Shallot, chopped
  • 1 Tbsp Butter
  • 1 Tbsp Pine Nuts, toasted

You guys know I love easy and convenient, which is why I often buy vegetables that are ready to eat. Pro Tip – Trader Joe’s is the best place for pre washed and trimmed vegetables!

First, I melted butter.

Next, I added the shallot and the green beans.

Then, I sauteed the green beans and shallots together for about 10 minutes.

Once the green beans were cooked, I toasted the pine nuts in the same pan.

In retrospect, I think I could have added in the pine nuts with the green beans and they would have toasted just fine.

This vegetable recipe was ridiculously easy and you could easily use whatever your favorite vegetable is instead of green beans.
