Healthy Holiday Series – Pumpkin Bread

Pumpkin Bread

Okay you guys – you have to bear with me during this weeks’ recipe! It is completely vegan and gluten free and before you exit this browser immediately, I promise you will not be disappointed in this bread recipe. I originally wanted to bake this for my niece whose allergies force her into a semi-vegan lifestyle and ended up loving it. This bread is super easy (only uses one bowl!) and you don’t need to get out your mixer or knead anything – only stirring. It is the perfect recipe for a brunch party, to have around the house during lazy holiday mornings, or you could divide it into smaller bread pans and give it as a gift! Also – I’m certain that you could use regular flour/oats and it would turn out just fine.

Ingredients

  • 1.5 flax eggs (1.5 Tbsp flaxseed meal + 4 Tbsp water)
  • 1/4 cup Olive Oil
  • 1/4 cup Maple Syrup
  • 3/4 cup Pumpkin Puree
  • 2 Tbsp mashed Banana
  • 2/3 cup Brown Sugar (packed)
  • 2 tsp Baking Soda
  • 1/2 tsp ground Cinnamon
  • 1 tsp Pumpkin Pie Spice
  • 1/2 cup Water
  • 1 cup gluten free Rolled Oats
  • 1/2 cup Almond Meal
  • 1 1/4 cup Gluten Free Flour
  • 2 Tbsp Raw Pepitas (pumpkin seeds)

First, I mixed together the flaxseed meal and water. Apparently, this acts as the eggs!

Then, I added in the pumpkin, banana, olive oil and maple syrup and mixed everything together.

Next, I added the brown sugar, baking soda, cinnamon, and pumpkin pie spice and used a whisk to make sure it was thoroughly combined.

Finally, I added the flour, almond meal, oats and stirred everything together.

The batter should be fairly thick but still pourable. If it seems too runny, you can add in an extra tablespoon of oats OR flour, but I didn’t need to add anything extra.

Then, the bread is ready to bake! I sprayed a little coconut oil spray in my bread pan, topped the batter with pumpkin seeds and put the pan in the oven for about an hour. Yes, an hour!

Once you can insert a knife all the way into the loaf of bread and it comes out clean, the bread is done! It has to cool all the way in the pan before you can cut into it. But once you do, it’s delicious!
