Protein Pancakes 4 Ways

Greek Yogurt Protein Pancakes:

• ¼ cup Plain or Vanilla Greek Yogurt
• ½ cup rolled oats
• 1 whole egg
• 1 egg white
• 1/8 tablespoon vanilla extract
Combine all above ingredients. Coat pan with non-stick spray. Wait 3-4 minutes before you flip the cake (cooking it on lower heat and slowly is key so it doesn’t break apart). Flip and cook 2-3 more minutes. Will make 2 medium size cakes. Recipe as written: 260 calories, 14 grams of protein, 27 grams of carbs, 6 grams of fat. Optional: Add in any fruit of your choice and/or a scoop of your favorite protein powder!

Banana Bread Pancakes:

• ½ cup rolled oats
• ½ mashed banana
• 2 egg whites
• ¼ cup cottage cheese
• Cinnamon to taste
Combine all ingredients very well (if possible use a blender). Coat pan with non-stick spray. Allow to cook until the edges start to brown and harden (about 3 minutes). Flip and cook another 2-3 minutes. Should make 3-4 medium size cakes. Recipe as written: 280 calories, 42 grams of cabs, 4 grams of protein, 4 grams of fat. Optional: Add in any fruit of your choice and/or a scoop of your favorite protein powder!

Pumpkin Spice Protein Pancakes:

• 1 scoop vanilla protein powder
• ½ pumpkin (NOT pumpkin pie filling!)
• cinnamon
• ½ cup rolled oats
• 2 egg whites
• 2 tbsp water
Mix all ingredients very well (if possible in a blender). Coat pan with non-stick spray. Allow pancakes to bubble and slightly brown, then flip over. Makes 4 cakes per serving. Recipe as written: 180 calories, 25 grams of carbs, 1 gram of fat, 20 grams of protein.

Egg (white) Banana Cakes (My favorite- I swear they are soooo easy and yummy you will never eat regular pancakes again):

• 2 egg whites
• 2 full eggs (or use 4 egg whites, your choice)
• 1 very well mashed banana
• Cinnamon or apple pie spice
• Raspberries or blueberries
Mash the banana very well, mix in eggs/egg whites. Add in whatever seasoning you like, I really like apple pie spice. Then toss in a couple of berries and cook! (Disclaimer, these can end up looking more like scrambled egg but I swear they are delicious and so easy! Could also throw in a muffin tin and bake at 350 for 15-20 mins!)
