Recipe of the Week – Ultimate Kale Salad

You know how no matter what, your mom still feels like you’re 8 years old and needs to take care of you? Because I’m certain that her mom sense knows that I mostly exist on coffee and tacos, Judy fed me this salad when I was home over Labor Day weekend, and it was the best salad I’ve had in a long time. Not much lettuce and a lot of veggies – just how I like it! This recipe will definitely make it into the rotation next summer but for now, here is one last salad to end the summer since the fall came roaring in without warning!

Dressing Ingredients

  • 1/3 cup grapeseed oil
  • 1/2 cup lemon juice
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons whole grain mustard
  • 2 teaspoons maple syrup

For the dressing, I threw all the ingredients into a small mason jar and shook it up until everything was combined. This is by far the easiest way to mix up salad dressing, plus it makes for easy storage if you don’t use it all!

Salad Ingredients

  • 2 cups kale, tightly packed and sliced thin
  • 2 cups red cabbage, sliced thing
  • 2 cups broccoli florets
  • 2 large carrots, peeled and grated
  • 1 red bell pepper, sliced thin
  • 2 avocados, diced
  • 1/2 cup fresh parsley, chopped
  • 1 cup walnuts
  • 1 tablespoon sesame seeds

Veggies

First, chop the vegetables + grate the carrots! It does take a minute to get everything chopped but after that this recipe is basically just mixing everything together.

Seriously, once everything was chopped I added the veggies and the dressing to a big bowl and mixed it up! It worked best to mix with my hands, but I’m sure some kind of big spoon or salad tongs would work too!

Once it is mixed, it’s ready to serve! My mom recommended only adding avocado to the serving you are going to eat, just so it doesn’t get brown/mushy. She also said that adding grilled chicken or steak makes this salad into a very filling meal, plus adding extra protein is always a good idea!This salad is also makes a ton and is (so far) still good in my fridge 3 days later!
